Directions:

A yeast dough may be allowed to rise once, twice or even three times to develop the flavor. When the dough has risen sufficiently, it will have about doubled in volume and will have a full, smooth look. To be sure the dough is ready, insert two fingers into the center, about 1/2 -inch deep. If the indentation remains, the dough is ready for the next step or the next rising. If it fills in, allow the dough to rise a little longer repeat the test.
