In a heavy 10-inch skillet or 3-quart saucepan over low heat, cook and stir sesame seeds for 5 minutes or just until lightly browned. Do not use oil. Transfer seeds to a bowl set aside.
Preheat oven to 350°. In a large mixer bowl at low speed, beat sugar and shortening until blended. Increase speed to medium and beat until light and fluffy. Beat in egg, vanilla and almond extracts. At low speed, gradually beat in flour, baking soda and salt until blended. Add sesame seeds and mix well.
Drop by rounded teaspoonfuls onto ungreased baking sheets. Flatten tops slightly with tines of a fork. Bake for 12 to 15 minutes or until crisp and golden. Cool cookies on wire racks.
Store in an airtight container in a cool place.
