Dissolve yeast in warm water with salt and sugar. Add flour to make a light dough. Knead about 2 minutes. Place dough in a well-greased bowl, cover, and let rise once (about 1 hour). Punch down dough. Knead lightly for 1 minute. Squeeze dough off into small balls dip in melted butter or margarine. Place 3 balls in each cup of a well-greased muffin pan. Let rise about 1 hour. Bake in a preheated 375° F oven for 10 to 12 minutes.
Note: These rolls are crisp and chewy and best eaten fresh from the oven, or warmed if eaten later.
