Like people and horses, Dutches come in al shapes and sizes. For example, at this writing I won twenty-nine different Dutches including cast iron and cast aluminum, in eleven different sizes.
No matter what you wan to cook, whether at home or in camp, you can find a Dutch to fit your needs. A good Dutch oven, properly taken care of, will last a lifetime.
Someone just getting started in Dutch cooking might be confused by the different sizes and trying to decide between cast iron and cast aluminum Dutches. Dutches may be labeled in one of two ways. Some you find list the capacity, i.e. 6 quart, 8 quart, etc., while the more common method is to measure the diameter of the oven. For the sake of consistency, I refer to Dutches by their diameter. In addition Dutches of the one diameter may also be offered in a "deep" model. These deeper Dutches tend to be about 1-inch to 1 1/2-inch deeper for the same diameter.
If such a thing as a standard size Dutch exists, one would pull out the 12-inch in diameter. Most recipes in this book use the 12-inch Dutch. Why? Because most beginning cooks are going to start with one pot meals which feed about 5 or 6 hungry mouths.
