Pound out the flank steak into thin pieces that are about 2 1/2 inches wide and 6 to 8 inches long. Smear mustard on meat, add small amounts of pickles, onion, and bacon. Salt and pepper to taste. Roll up and secure with toothpicks. Brown meat and put in Dutch oven. Add water or wine. Cook until done. Serve with dumplings or over noodles.
