Slow Oven Stew

Ingredients

2 pounds lean beef, cubed
1 1/2 teaspoons Cajun seasoning, divided
2 onions, sliced
2 red potatoes, peeled, cut in big chunks
2 stalks celery, cut 1 inch
3 carrots, cut 1 inch
1/2 teaspoon sugar
1/4 cup tapioca
1 1/2 cups V-8 juice

Directions:

Season meat with 1/2 the seasoning and put in dutch oven. Add vegetables; sprinkle with remaining seasoning and sugar. Mix tapioca in V-8, then pour over all. Cover and bake at 250° for 5 hours, or 325° for 3 1/2 hours. don’t peep!
