Down-Home Biscuits

Ingredients

2 cups white unbleached flour
1 tablespoon baking powder
1 teaspoon salt
4 tablespoons soft butter
3/4 cup cold milk

Directions:

1. Preheat the oven to 450°F.

2. Sift the flour, baking powder, and salt in a large mixing bowl. Add the butter and work it in with your fingertips until the mixture is crumbly and even in texture. Add the milk and knead the dough very lightly (about 20 strokes)—just to make it smooth.

3. Place the dough on a lightly floured board. Dust a little flour on your hands and gently flatten the dough to a 3/4-inch thickness. Using a floured 3-inch biscuit cutter or rim of a glass, cut circles from the dough and place on an unoiled baking sheet, leaving enough room between them to allow for expansion. (You can cut the dough into squares or diamonds if you prefer.)

4. Place in the oven and bake for 12 to 15 minutes, or until the biscuits are golden brown. Serve hot from the oven.

VARIATIONS
Cheese Biscuits: Add 1/2 cup grated Cheddar (or other) cheese when adding the milk.
Herb Biscuits: Add 1/4 teaspoon each of dried oregano, chives, and basil to the dough along with the dry ingredients. Or, if you prefer, add 3/4 teaspoon of a single herb, such as dill weed. If you use fresh herbs, double the quantity.
