1. Place the dough on a lightly floured board and roll into a 1/2-inch thick rectangle or square. Using a floured 3-inch biscuit cutter or rim of a glass, cut circles from the dough and place on a well-greased baking sheet, leaving enough room between them to allow for expansion.
2. Using your thumb, make a deep well in the center of each circle of dough. Fill the well with a heaping teaspoon of jam. Let rise until the buns have more than doubled in size.
3. Beat the egg white with a small whisk or fork until it forms soft peaks, then brush some on top of each risen bun. Sprinkle with confectioner’s sugar (you can shake it through a small sieve).
4. Place the buns in a preheated 375°F oven and bake for 20 minutes, or until browned. Cool on a wire rack.
