1. Combine the avocado and lime juice in a nonreactive small, heavy saucepan and toss to mix. Stir in the onion, garlic, bay leaf, Guinea pepper, parsley, and 1/2 cup water. Bring to a simmer over low heat and cook until the avocado and onion are soft, about 5 minutes. Stir in the cilantro, tomato and salt and pepper and simmer for 1 minute more.
2. Remove from the heat and taste for seasoning, adding salt or lime juice as necessary add a little water as necessary if the sauce is too thick. Remove the bay leaf before serving. Transfer to a small bowl, cover, and refrigerate until ready to serve.
