1. Lay the steaks flat on a cutting board and cut crosswise into long, thin strips, each should be about 1/8 inch thick, 1 inch wide, and 4 to 5 inches long. Weave the beef strips lengthwise onto the skewers and set aside in a large baking dish while you prepare the marinade.
2. Combine the garlic, lemongrass, coriander seeds, and brown sugar in a mortar and pound into a coarse paste with the pestle. If you don’t have a mortar and pestle, purée the ingredients in a blender. Stir in the fish sauce. Drizzle the marinade over the beef skewers and rub it into the beef to coat as thoroughly as possible. Cover and let marinate, in the refrigerator, for 30 minutes, or until the grill is ready.
3. Preheat the grill to high.
4. When ready to cook, oil the grill grate. Arrange the skewers on the hot grate and grill, turning with tongs, until the meat is cooked to taste, 1 to 2 minutes per side (2 to 4 minutes in all) for medium. Sprinkle the skewers with chopped peanuts and serve at once.
