Preheat oven to 350 degrees. In a large bowl, blend cheese, sugar, lemon zest, vanilla and 1 egg. In a medium size bowl mix together flour and baking powder till blended. Slowly add flour mixture to cheese mixture until flour mix is well incorporated. Scoop mixture out of bowl with a small ice cream scoop and evenly space on a parchment-lined cookie sheet (the cookies will increase in height, but they won't flatten). Bake for 15-20 minutes. Makes one dozen large cookies. To ice the cookies mix together water, powdered sugar and lemon juice.
