Ingredients

1 (16-ounce) box whole wheat pasta of your choice
2 cups diagonally sliced carrots
1 large bunch broccoli
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
3/4 cup low fat salad dressing of your choice (Italian, Honey French, or Ranch are good)
2 tomatoes

Directions:

1. Put a large pot of water on to boil While you wait for water to boil, begin steps below. As soon as water is ready, add pasta and set timer according to directions on box.
2. Cut carrots diagonally. Cut broccoli into bite-size florets. Seed and cut peppers into small chunks.
3. At the sound of the timer, quickly toss carrots and broccoli into boiling water with pasta. Set timer for 1 minute. When timer goes off again, quickly drain and rinse in cold water to halt cooking process. (This step brightens the vegetables while taking the edge off their rawness.)
4. Transfer pasta to a large bowl that has a tight-fitting lid. Add peppers and dressing. Mix to coat evenly.
5. Chop tomatoes. Prepare dishes for immediate serving. Add chopped tomatoes and serve.
