1. Heat oven to 350°. Spray 1 ½-quart casserole with cooking spray. Layer potato slices in casserole. Mix dressing, vinegar, onion, salt and pepper pour over potatoes. Sprinkle with bacon bits.
2. Cover and bake about 1 hour or until potatoes are tender. Gently stir before serving. Sprinkle with parsley.
