Hearty Veggie Surprise Sandwich


Serves: 6

Ingredients

6 servings bread of your choice, such as heart wheat, split onion rolls, or pita bread
6 slices ripe beefsteak tomatoes
6 slices sweet red onions
1 cup bean sprouts
6 leaves romaine or butter lettuce
FILLING
8 ounces tofu drained
1 cup shredded carrot
1 cup fresh baby spinach
1 cup sliced black olives
3 scallion with tops, minced
1 tablespoon finely minced fresh basil
1 clove garlic minced
1 tablespoon rice vinegar
1 teaspoon fresh lemon juice
salt and cracked pepper to taste

Directions:

1. To prepare the filling, place the tofu in a medium-sized bowl and mash with a fork. Add all of the remaining filling ingredients, and stir to combine well.

2. Pile the filling on the bottom half of the bread. Add the tomato, onion, bean sprouts, and lettuce, and pop on the second half of the bread. (If using pita bread, dice the tomato and onion and shred the lettuce before filling the pockets.) Serve immediately
