1. Place the bananas in a large mixing bowl, and mash well with a fork.
2. Place the olive oil, egg, vanilla extract, and salt in a measuring cup, and whip with a fork to mix. Stir the olive oil mixture into the mashed bananas.
3. Stir the rolled oats and oat bran into the banana mixture, mixing well. Add the dried fruit and walnuts, and combine thoroughly.
4. Coat a large cookie sheet with olive oil cooking spray, and drop generously rounded tablespoons of the dough onto the sheet, spacing the cookies about 11/2 inches apart to allow for spreading. Flatten each cookie gently with the back of a spoon.
5. Bake the cookies in a preheated 350°F oven for 18 to 20 minutes, or until the edges and bottoms of the cookies are lightly browned. Do not over bake.
6. Transfer the cookies to a wire rack or sheet of aluminum foil, and allow to cool completely before serving. These cookies crumble when hot.
