Place chicken breasts and water in a soup pot; cover and bring to a boil. Skim foam from top and sides of pan. Simmer about 45 minutes. Remove chicken and let cool. Skim fat from broth. Add celery, onion, carrots and chicken broth. Simmer 15 minutes. Add noodles or pastina. Meanwhile, remove chicken from bones and chop. Return chicken and seasonings to pot; simmer until noodles are tender and chicken is heated through, about 15 minutes.
