Twice Baked Garlic Potatoes

Ingredients

6 to 8 large russet potatoes
1 cup milk
1/4 cup butter or margarine
1 1/2 teaspoons garlic powder
1/2 teaspoon parsley

Directions:

Preheat oven to 400 degrees.

Poke potatoes with a fork twice and place on a baking sheet. Bake 50–55 minutes, or until tender. Once potatoes have cooled slightly, slice lengthwise and carefully scoop out the flesh, leaving about a 1/4-inch-thick shell.

Put the scooped-out potato into a mixing bowl and mash thoroughly. Add milk, butter, garlic powder, and parsley. Mix with an electric mixer until creamy. Spoon potato mixture back into potato shells. Bake at 350 degrees an additional 15 minutes, or until heated. Makes 6–8 servings.

VARIATION: Replace garlic powder and parsley with 2 cups grated cheddar cheese, and 10 to 12 slices bacon, cooked and crumbled, for Cheddar and Bacon Twice-Baked Potatoes.
