Ingredients

1 pound lean ground beef
1/4 pound ground veal
1/2 pound lean ground pork
1/2 cup heavy cream
2 eggs
cayenne pepper
freshly ground black pepper
2 slices white bread
1/2 cup slightly browned chopped onion
4 egg yolk
1/4 cup butter
1 teaspoon salt

Directions:

Remove crust from bread and crumble bread into cream. Soak for 10 minutes. Put beef, pork, veal, and onion through a food grinder. Add soaked bread, eggs, egg yolks, a few grains of cayenne pepper, salt and black pepper and mix well. Shape into balls and sauté in butter.
