Green and White Soup

Ingredients

6 cups water
4 cups finely chopped potatoes
4 cups quartered brussels sprouts (1 pound)
1 cup chopped celery (3 stalks)
2 cups green onions chopped
8 ounces water chestnuts sliced and coarsely chopped
1/4 cup grated horseradish
1/4 cup soy sauce
1/2 teaspoon salt (optional)

Directions:

In a medium soup pot, bring the water to a boil, and add the potatoes, brussels sprouts, and celery. Simmer for 15 minutes.

Add the green onions, water chestnuts, horseradish, soy sauce, and salt to the soup, and simmer for another 5 minutes. Cover, remove from the heat, and let set a few minutes before serving.
