• Grind the cashews in a blender with the soymilk until creamy. Add the oil, then the honey through the top of the blender in a fine stream. When creamy, add the orange juice, papaya or mango juice, lemon juice, stevia extract, and salt, and process.
• Place the agar in a small pan with the apple juice, and soak for 1 minute. Bring to a boil then simmer on low heat for about 3 to 5 minutes until dissolved. Blend into the other ingredients.
• Chill the ingredients before pouring into an ice cream machine. Follow the directions of your ice cream maker or use the refrigerator method.
NOTE: Agar makes this sherbet very smooth. Be sure the agar has been thoroughly dissolved. For good flavor, make the orange juice strong.
VARIATIONS: Blend in a small banana or 2 tablespoons of coconut. If using coconut, grind it with the cashews. If more liquid is needed when grinding, use some of the orange juice.
