• Slice 1 1/2 cups of the berries in half lengthwise and arrange over the top of the cheesecake.
• Crush the other 1/2 cup of berries, and place in a small saucepan with the 1/4 cup of water. Simmer for about 3 minutes, and strain out the pulp.
• Return the strawberry juice to the pan. Mix in the honey, stevia extract, and cornstarch. Cook on low until it thickens.
• Pour the glaze over the strawberries on top of the cheesecake.
