Apple Chips

Ingredients

1 Granny Smith or Golden Delicious apple, unpeeled and uncored
4 cups cold water
1/4 cup fresh lemon juice
2 cups granulated sugar

Directions:

Preheat oven to 200°F. Line a baking sheet with parchment paper or a silicone baking mat. Set aside. Thinly slice the apples into horizontal rings, about 1/16-inch thick. Place the apple rings in a bowl filled with 2 cups water and 2 tablespoons lemon juice. Set aside. Combine the remaining 2 cups water and 2 tablespoons lemon juice and sugar in a large saucepan over medium-high heat and cook for 3 to 4 minutes or until the mixture comes to a boil, stirring frequently to dissolve the sugar. Add the apples and cook for 1 to 2 minutes or until the mixture returns to a boil. Transfer the apples to a sieve placed over a bowl drain well. Place the apples in a single layer on the prepared baking sheet. Pat the apple rings with a double layer of paper towels. Bake for 1 hour or until the apple rings are dry. If the apple rings are not dry after an hour, turn off the oven and allow them to dry in the oven. The apple chips can be stored in an airtight container for up to three days.
