Allow 3/4 cup stuffing for each pound of ready-to-cook turkey. This recipe makes enough for a 12-pound turkey.
Yield: Makes about 9 cups of stuffing.
Ingredients:
3/4 cup finely chopped onions
1 1/2 cups chopped celery (with leaves)
1 cup butter
2 10-ounce cans of chicken broth
9 cups dried bread cubes
2 teaspoons salt
1 1/2 teaspoons dried sage leaves
1 teaspoon dried thyme leaves
1/2 teaspoon pepper
Cook and stir onion and celery in butter in 10-inch skillet until onion is tender. Add chicken broth and then stir in about 1/3 of the bread cubes. Turn into a deep bowl. Add remaining ingredients; toss. Stuff turkey just before roasting.
