2 cups diced cooked chicken
3 avocados, peeled and diced
3 tomatoes, seeded and diced
1/2 red onion, chopped
2 tablespoons lime juice
2 cloves garlic, minced
3 tablespoons chopped fresh coriander (optional)
Salt and pepper to taste
4 pita bread
Sour cream to taste
4 leafs lettuce
In a bowl, mix chicken, avocados, tomatoes, onion, lime juice, garlic, coriander, salt and pepper. Refrigerate for 1 hr.
Cut pitas in two.
Put a leaf of lettuce and some sour cream in each pita pocket.
Fill with chicken-avocado mixture.
Suggestion:
Dice should be small, no bigger than ½ in. (1 cm), so that flavours blend better.
