Cooking Spray
   6 tablespoons butter
   1 cup packed brown sugar
   1/2 cup pureed sweet potatoes
   1/2 cup pureed carrots
   3/4 cup creamy peanut butter
   2 teaspoons mexican vanilla
   2 large eggs
   1/2 teaspoon salt
   3/4 cup oat bran (can be found in grocery store near the oatmeal)
   1 cup all-purpose flour
   1/2 cup peanut butter chips or chocolate chips
   Powdered sugar


Preheat oven to 325 degrees F. Spray the bottom, not the sides, of a 9x13-inch pan.
In a saucepan over medium-low heat, melt the butter and brown sugar. Remove from heat and allow mixture to cool.
Whisk in the puréed sweet potatoes and carrots, peanut butter, vanilla, eggs, and salt. Add the oat bran and flour, and mix just until combined. Mix in the peanut butter chips, ten pour into prepared baking pan.
Bake for 30 minutes or until toothpick comes out clean. Allow to completely cool in pan. Frost with peanut butter and /or dust with powdered sugar.
