Sprouted Lentil Salad

2 cupss lentil sprouts
1/2 cup cucumbers, diced
1/2 cup tomatoes, chopped
1/3 cup green onions, chopped
1/4 cup fresh cilantro, chopped
1/3 cup radishes, thinly sliced
1 tablespoon olive oil
2 tablespoons lemon juice
1 tablespoon white wine vinegar
1 teaspoon oregano
1/2 teaspoon garlic
1 1/2 teaspoons curry powder
1/2 teaspoon dry mustard
Salt and pepper to taste
In a medium bowl, combine lentil sprouts, cucumber, tomato, green onions, cilantro and radishes. Lightly toss.
In a small bowl, whisk together olive oil, lemon juice, white wine vinegar, oregano, garlic, curry powder, mustard, salt and pepper. Drizzle dressing over salad and toss lightly to coat.
Chill 30 minutes to blend flavors before serving.
