The Ultimate Tuna Noodle

Don't give up on Tuna Casserole until you try this recipe. It is simply divine with its fresh vegetable layers and herb sauce.
1/2 cup sour cream
1/2 cup mayonnaise
2 teaspoons prepared mustard
1/2 salt
1/2 teaspoon dried thyme
1/4 teaspoon dill weed
5 cups cooked noodles (spiral, macaroni, or egg)
1 (6 oz) tuna, drained, flaked (you can use 2 cans if you prefer more tuna flavor)
1/3 cup sliced green onions
1 small zucchini, sliced
1 cup (4 oz) shredded cheddar cheese
1 medium tomato, chopped
Combine sour cream, mayonnaise, salt, thyme, and dill weed in a small bowl. In large bowl, combine noodles, tuna, and green onions. Stir in sour cream mixture. Pour half in a greased 2-qt. casserole dish; top with half of the zucchini. Repeat layers. Microwave, uncovered, for 6-8 minutes (High in 850 watt oven; adjust accordingly) to heat through. Top with shredded cheese and chopped tomato. Microwave for 2 minutes longer, uncovered. Let stand 3 minutes before serving.
* Nutrition note: You can replace the sour cream with plain yogurt and use light mayonnaise for a lighter version.
