Ingredients

Salad:
2 heads butter lettuce
1/2 red onion, diced
1 (4-ounce) package blue cheese, crumbled
1 Granny Smith apple, diced
1/2 cup chopped pecans or walnuts
1/2 cup dried cranberries

Raspberry Vinaigrette:
1/3 cup raspberry jam
1/4 cup olive or canola oil
4 teaspoons rice vinegar
4 teaspoons cider vinegar, or 8 ounces raspberry vinegar
1 teaspoon coarse-grind mustard, or 1/2 teaspoon dry mustard

Directions:

Toss all Salad ingredients. Pour blended Raspberry Vinaigrette over salad.
