Gingerbread Waffles:
Combine first 9 ingredients in a large bowl; mix well and set aside. In a small bowl, whisk together remaining ingredients. Add egg mixture gradually to flour mixture; stir until well blended. Bake until golden in a lightly greased waffle iron, according to manufacturer's instructions. Serve with warm Blueberry-Maple Syrup.
Blueberry-Maple Syrup:
Stir together sugar, water, cinnamon, lemon zest and lemon juice in a saucepan over medium heat; bring to a boil. Reduce heat and simmer, stirring often, for 5 minutes, until thickened slightly. Add berries; simmer for an additional 10 to 15 minutes, until berries pop. Remove from heat; stir in syrup and salt. Makes about 2-1/3 cups.
