Mash bananas add enough applesauce to measure 1 cup set aside. Cream together shortening and sugar. Add eggs beat well. Add buttermilk (may be substituted with sour milk [3 tablespoons milk plus 1 teaspoon vinegar]) and banana and applesauce mixture. Sift or mix together dry ingredients add to creamed mixture blend well. Pour into greased 8 1/2x2 1/2x4 1/2-inch loaf pan. Bake at 350 degrees F. for 45 minutes or until done. Makes 1 loaf.
