Applesauce-Oat Bread

Ingredients

1 cup whole wheat flour
1 cup flour
1 cup rolled oats
4 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon baking soda
1/4 teaspoon salt (optional)
1 egg or 1/4 cup egg substitute
1/2 cup brown sugar
1 1/2 cups applesauce, unsweetened
2 tablespoons corn oil
1/3 cup raisins

Directions:

1. In a large bowl, combine the flours, oats, baking powder, cinnamon, ginger, cloves, baking soda and salt.

2. In a medium bowl, beat together the egg, brown sugar, applesauce, and oil until they are well blended. Stir in raisins.

3. Combine mixtures, stirring ingredients just to moisten them. Pour into 9 x 5 x 3-inch loaf pan coated with nonstick vegetable cooking spray.

4. Bake the bread at 350°F for 50-60 minutes or until a toothpick inserted in the center of the loaf comes out clean. Let the bread cool in the pan for 10 minutes and then turn out onto a wire rack to cool.

5. Cut into 18 slices.
