Yield: 8 - 10 dozen cookies
Cream butter with the sugars. Add the egg and the oil. Mix well. Add oats, cornflakes, flour, soda, salt, and vanilla. Mix well. Stir in coconut and nuts. Roll into 1-inch balls of dough and place on a lightly greased cookie sheet. Flatten the balls with a fork in a crisscross pattern. Dip fork in water between cookies. If desired, place glazed cherry half in the center of each cookie. Bake at 350° for about 10 minutes, or until light brown. Do not overbake.
