Heat butter and oil in heavy skillet. Add rice, onion, and garlic, and brown until rice is golden. Add remaining ingredients; cover and bake at 350° about 45 minutes or until rice is dry. Freezes well. (Be sure to use the olive oil, as it gives the rice a wonderful flavor.) Double or triple the recipe and freeze in zip-lock bags.
