In a large mixing bowl, dissolve yeast in warm water. Add 3 cups flour, cheese, chives, butter, sugar, salt and thyme beat for 2 minutes. Stir in enough of the remaining flour to form a soft dough. Turn onto a floured board knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Shape into two loaves and place in greased 9-in. x 5-in. x 3-in. loaf pans. Cover and let rise in a warm place until doubled, about 30 minutes. Bake at 350° for 40-45 minutes or until golden brown. Remove from pans to cool on a wire rack. If Cooking for Two: Wrap one loaf in heavy-duty aluminum foil and freeze.
