In a skillet over medium heat, cook bacon until crisp. Remove bacon from skillet to a paper towel; add potatoes and onion to drippings in skillet. Cook potatoes and onion until tender; drain well but do not remove from skillet. In a separate non-stick skillet over low heat, scramble eggs until set but still moist. Spoon eggs over potatoes; layer with bacon and cheese. Cover and cook over low heat until cheese is melted.
