Baked Omelet Your Way

Ingredients

4 slices bread, toasted and cubed
8 eggs, beaten
4 cups milk
2 cups shredded Cheddar cheese, divided
1/2 cup green pepper, diced
1/2 cup onion, diced
1/2 cup tomato, diced
8 slices bacon, crisply cooked and crumbled, or 1 cup cooked ham, diced
dried oregano to taste

Directions:

Spread toast cubes in a greased 13"x9" baking pan. Whisk together eggs and milk; pour over toast. Sprinkle with one cup of cheese. Bake, uncovered, at 350 degrees for 30 to 35 minutes. Top with remaining cheese and other ingredients; bake an additional 25 minutes.
