Veggies on a Bun Meets Shepherd’s Pie
Hey you guys--just wanted to let you know that I tried a new variation of Carmel's recipe for Veggies on a Bun ! I tripled the recipe--put the mixture in a 9x13 baking casserole dish--added ice cream scoops of leftover mashed potatoes to the top of the mixture--baked till heated thru--then I added shredded cheddar cheese to the top of the potatoes. Then baked a few minutes longer till the cheese melted. My family loved this new version of Shepherd's Pie! Just thought I would pass this idea along. This would work as a quick dinner with some of the Veggies on a Bun mixture frozen ahead--just thaw in the fridge-then assemble at dinner time and heat. You could also use instant mashed potatoes (or frozen, I have heard they are good, but I have not used them) for convenience
