5 Ingredient Casseroles

tunaAre you in need of a super quick casserole? Try out one of these 5 ingredient recipes. I have found, and I am sure that most of you have too, that you can turn just about any meal into a casserole. These recipes take the main ingredients from a meal and turn them into a quick one-pot meal. Serve them up straight from the Pyrex.


Wild Rice Turkey Bake - Serves 6

  • 3 cups cooked wild rice
  • 3 cups chopped cooked turkey
  • 16 oz. pkg. frozen french cut green beans, thawed
  • 17 oz. jar alfredo sauce
  • 1/2 cup soft bread crumbs

Preparation: Preheat oven to 350 degrees. Mix rice, turkey, green beans and alfredo sauce in large bowl. Place in 12x8" glass baking dish and sprinkle with bread crumbs. Bake at 350 degrees for 45-50 minutes until casserole bubbles at the edges and bread crumbs are browned. To freeze, undercook rice by 10 minutes. Do not thaw green beans. Mix all ingredients and place in baking dish. Wrap well and attach small freezer bag with bread crumbs. Label and freeze up to three months. To thaw and reheat, thaw casserole overnight in refrigerator. Uncover, sprinkle with breadcrumbs, and bake at 350 degrees for 50-65 minutes until bubbly and thoroughly heated.


 Chicken Tortellini Casserole - Serves 4

  • 9 oz. pkg. refrigerated tortellini
  • 2 cups frozen broccoli, thawed and drained 1
  • 0 oz. container refrigerated four cheese alfredo sauce
  • 10 oz. pkg. refrigerated grilled chicken breast strips
  • 1/3 cup soft bread crumbs

Preparation: Preheat oven to 350 degrees. Cook tortellini according to package directions and drain. Combine with broccoli, sauce and chicken in large bowl. Transfer to 1-1/2 quart casserole dish and top with bread crumbs. Bake at 350 degrees for 25-35 minutes or until casserole is bubbling and bread crumbs are browned.


  Fish Fillet and Bean Bake - Serves 4 

  • 16 oz. jar chunky garden salsa
  • 2 (15 oz.) cans great northern or cannellini beans, rinsed and drianed
  • 2 cups frozen bell pepper and onion stir fry, thawed
  • 1 lb. red snapper or grouper fillets, cut into 4 pieces
  • 1/2 cup grated Parmesan cheese

Preparation: Preheat oven to 425 degrees. Grease 13x9" glass baking dish. Combine salsa, beans and pepper and onion mixture in large bowl. Place in prepared baking dish. Top with fish fillets. Sprinkle fish with Parmesan cheese. Cover dish with foil and bake at 425 degrees for 20-30 minutes or until fish flakes easily when tested with fork.


Meatball Casserole - Serves 6 

  • 18 oz. pkg. frozen meatballs, thawed
  • 16 oz. pkg. frozen peppers and onions stir fry mixture, thawed
  • 2 cups chunky pasta sauce
  • 1 cup shredded Mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Preparation: Preheat oven to 350 degrees. Combine meatballs, pepper and onion mixture and pasta sauce in 2 quart glass baking dish and stir well to combine. Top with cheeses. Bake at 350 degrees for 25-30 minutes or until casserole is bubbling and cheese is melted.
