Devilish Little Chicks
By Bethany Booth
Kids have no trouble hunting for Easter eggs but getting kids to eat their hard-boiled eggs can be a different story. Here is a recipe that disguises deviled eggs as charming little chicks that all ages will enjoy!
Deviled Egg Chicks
6 hard-boiled eggs; peeled
¼ cup mayonnaise
¼ cup shredded parmesan cheese
¼ teaspoon curry powder
¼ teaspoon onion powder
¼ teaspoon prepared mustard
1/8 teaspoon pepper
3 stuffed olives
1 small red pepper
Cut a thin slice off the bottom of each egg so that it sits flat and upright. Cut a zigzag pattern one third down from the top of each egg. Carefully scoop out the yolks and place in a small bowl; mash with a fork. Add mayonnaise, cheese, onion powder, curry, and mustard and pepper until well blended. Spoon yolk mixture into the egg white bottoms and replace tops.
Slice olives for round eyes. Cut 6 small triangles from the red pepper for beaks. Gently press into egg yolk filling. Refrigerate until ready to serve.
