10-Minute Pita Pizza

It is that time again and you are feeling rushed and unprepared. Do you give it all up and turn to take out? Not if you happen to keep a pack of pita bread and some shredded cheese in the freezer like I always do. Pitas are my quick and confident reply whenever the unavoidable question sneaks up on me… What’s for dinner?
Pita Pizza can be as simple as a can of tomato sauce and shredded cheese sprinkled over a pita or as gourmet as garlic brushed, toasted pita bread topped with blue cheese sauce, grilled chicken, roasted bell peppers, and mozzarella cheese. Use your creativity and whatever toppings happen to be in your fridge. Try a BBQ Chicken pizza or use Sweet ‘n’ Sour sauce, pineapple, and Canadian bacon for a special Hawaiian pita pizza.
This idea is so flexible and tasty it will undoubtedly have the family enjoying an almost homemade pizza dinner in less than 10 minutes.
Pita Pizza
2 flat pita breads
1 1/2 cups shredded mozzarella cheese
¼ cup grated Parmesan cheese
½ cup pizza sauce
1 clove garlic or garlic salt
2 Tablespoons butter
Desired Toppings such as: pepperoni, Canadian bacon, black olives, green peppers, etc…
Preheat oven to 400 degrees. Spray a baking sheet with non-stick spray. Place pita bread on baking sheet and toast in oven for 3-4 minutes.
In a small glass bowl, combine garlic and butter. Melt in microwave for 20-30 seconds.
Use a spoon or brush to spread garlic butter over pita bread.
Cover pitas with pizza sauce and other desired toppings. Sprinkle with mozzarella cheese and top with Parmesan cheese. Bake for 6-8 minutes or until cheese is melted.
Use a pizza cutter to cut into quarters.
Just because you are throwing dinner together at last minute doesn’t mean you have to forego the bread sticks. Pita Cheese Bread goes well with pizza sauce, soup and salad or on its own as a tummy-warming snack.

Pita Cheese Bread Sticks

You can mix up your own scrumptious version of the sauce or just pay the dollar at Little Caesars for the extra dipping sauce and keep it in the fridge.

Crazy Pizza Sauce
1 12 ounce can tomato paste
1 ½ cups water
½ teaspoon dried oregano
¼ teaspoon dried basil
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon sugar
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon Accent
Pre-mix dry ingredients and set aside.
In a small saucepan, combine tomato paste and water.
Over medium high heat, bring to simmer.
Add the pre-mixed spice, stir well.
Reduce heat to low and simmer 3-35 minutes, stirring occasionally.
Refrigerate in an airtight container until ready to use.
