Summer Salads

Want to add more fruits and veggies to your families’ menu? Start each meal with a salad. By offering a fruit and yogurt combo before the waffles or a green salad as an appetizer, the family will fill their stomachs with more low calorie, nutrient rich fruits and vegetables and less of the high calorie foods that may follow.
There is no better time than summertime to enjoy fresh fruits and vegetables. Here are a few summer salad ideas to help start each meal right.
Yogurt Apple Salad
½ cup plain yogurt
2 teaspoons fresh lemon juice
4 apples, cored and thinly sliced
¼ cup raisins
In a bowl, whisk together yogurt and lemon juice. Add apples and raisins; toss to combine. Serves 4.

Asian Carrot Slaw
¾ pound carrots, peeled and shaved with a vegetable peeler
4 scallions, thinly sliced
2 tablespoons rice vinegar
1 tablespoon vegetable oil
1 ½ tablespoons toasted sesame seeds
½ teaspoon lime zest
1 tablespoon fresh lime juice
Salt and Pepper
In a bowl, combine carrots, scallions, vinegar, oil, sesame seeds, lime zest and juice. Season with salt and pepper; toss to combine. Serves 4.

Rainbow Salsa Pasta Salad
10 ounces (1 pint container) red cherry tomatoes, halved
10 ounces (1 pint container) yellow cherry tomatoes, halved
10 ounces (1 pint container) green cherry tomatoes, halved
1 jalapeno chile, seeded and minced
2 limes, juiced
1 small red onion, thinly sliced
½ cup extra virgin olive oil
¼ cup chopped fresh cilantro
1 pound orcchiette (or other short pasta)
Combine tomatoes, jalapeno, lime juice, onion, and oil in a large bowl. Sprinkle with 1 1/2 teaspoons salt. Let stand at room temperature until tomatoes release their juices, about 1 hour. Toss with half the cilantro.
Bring a large pot of salted water to a boil. Add pasta, and cook until al dente, about 8 minutes. Drain, and rinse with cold water.
When ready to serve, toss pasta with tomato mixture. Stir in remaining cilantro, and adjust seasoning with salt, pepper, and lime juice. Serve immediately. Serves 8.
