When we were younger, Valentine's Day preparations took about as much time as the search for finding the Titanic. Decorations adorned family areas, and special red and pick meals were planned. Sponge Bob Square Pants and Little Mermaid valentines were laboriously signed by chubby fingers for all 30 students in a classroom, with something special for the teacher. For most of us however, this idyllic scenario was BW-"Before Work". For those of us in this category, we are lucky if we remember there IS a Valentine's Day.
In case there are some of you out there who will be driving home on February 14 when this realization hits, here is a simple recipe for this special day you almost forgot.
Easy baked bananas with lemon juice, sugar, and a little coconut.
INGREDIENTS:
- 4 firm bananas
- 1 to 2 tablespoons melted butter
- pinch salt
- 1 tablespoon lemon juice
- 2 teaspoons granulated sugar
- 1/2 cup flaked coconut
PREPARATION:
Preheat oven to 375°.
Peel bananas and place in a well greased baking dish. Brush generously with butter and sprinkle lightly with salt. Sprinkle granulated sugar evenly over bananas, then drizzle with lemon juice and sprinkle with coconut.
Bake for 15 to 18 minutes, or until bananas are tender. Serve with syrup or a dessert sauce, if desired.
