Nothing beats homemade applesauce:
Just peel, core, and coarsely chop some apples. Simmer in a covered saucepan with a small amount of water, OR try pineapple juice for an incredible flavor change. Simmer about 20 min., then mash, or put them through a food mill, or leave chunky.
Add a few drops of lemon juice if planning to keep it awhile. If eating right away, the lemon juice isn’t needed. Toss in some walnut chunks, maybe a little unsweetened coconut and a handful of raisins and you have a divine and healthy treat!
And how about those Apple Fritters (what a fun word, fritter). This recipe’s been around for over 100 years:
Apple Fritters
2 C flour
¾ tsp soda
½ tsp salt
2 tbsp sugar
¼ tsp nutmeg
2 eggs, well beaten
1 1/3 C sour milk (or buttermilk); sour milk by adding 1 tbsp vinegar and let sit for a few min.
2 tbsp butter
2 C diced apples
Powdered sugar
Sift and measure flour. Sift again with soda, salt, sugar and nutmeg. Combine well beaten eggs, milk and melted butter. Turn wet ingredients into dry ingredients and beat until smooth. Fold in apples last.
Drop by spoonfuls into deep fat and cook to rich brown, turning frequently. Sprinkle finished product with powdered sugar if desired. (The fat when ready for frying fritters should be 375º, or it should brown a cube of bread in 60 seconds.) Makes 8 servings.
