I feel sometimes that St. Patrick's day gets blown over. I say celebrate any time you have the opportunity! I found some fun and yummy ideas to make your March 17th a little more festive.
Pretzel Shamrock
Only 3 1/2 pretzels to make this scrumptious shamrock. Dip pretzels in white chocolate, place on wax paper so that they are touching. Break a pretzel in half for the stem. Let cool and set. Decorate with green frosting (adding green sprinkles is a nice touch).
Leprechaun Brownie Hats
Hats off to this fun dessert. Bake brownies in muffin tins. When baked and slightly warm, mold to the perfect hat. When cool, dip in green candy coating. Wrap with a black licorice belt and use a gum drop for the buckle.
Rainbow Waffles
I grew up with green everything on St. Patrick's Day. That was a fun tradition that my mom had. I never thought to do rainbow food! So Fun! There are 51 more GREAT rainbow ideas at this site:
Mini Cookie Shamrocks
Roll your sugar cookie dough into a log. Cover in green sprinkles. Cut into tiny circles. Layer as needed to make the perfect shamrock.
Lucky Charm Trail Mix
They're after me Lucky Charms Trail Mix! So easy. Throw some pretzels, M&Ms, or whatever else you want into a bowl filled with lucky charms. A quick fix to a festive snack with something in it for everyone. I think it would be a huge hit.

Green Pepper Shamrock
Slice a green pepper from top to bottom. Find a pepper that has three "Bumps" or whatever you would like to call it. Better yet, find one with 4 for good luck!. Toast on English muffins with cheese.

St Patrick's Day Treat Tradition...
"Each year on the evening of March 16th, leprechauns would sneak into our house while we were sleeping and make mischief. My sisters and I would wake up on St. Patrick's Day to the sight of drawers opened and their contents strewn about on the floor, pictures hung upside down, and spilled flour on the counters with tiny little leprechaun tracks in it. To make up for the mischief, the leprechauns would also leave us treats in their favorite color - green. Gum, breath mints, lollipops, and sometimes a red licorice pipe. We would rush around the house trying to find the "mistakes" before anyone else and shout them out loud to each other."
