4 Creative Ways to Use Leftovers

Thanksgiving day is a great way to get tons of food and lots of leftovers. I don't want that to sound sarcastic in anyway, leftovers are great! I always try to make more food than I'll eat to save me preparation on my next meal.

The main issue is that sometimes when we get lots of leftovers, we don't know what to do with it all. We get bored of the same things. May I suggest some ideas of what you can do with them? Lets lend a moment to the box of possibilities.


1. Share it with someone in need.

I come from a large family, and there was a time when my father was unemployed. I'm sure some of you can relate. We had a nice house because his job had been great, but when income is suddenly stopped, it makes it hard to pay the mortgage and bills, including food bills. However, we had good neighbors and people from our church who knew of our situation. (There were probably even some who didn't know, just felt they should help). People would bring us things, even food and leftovers. I am so grateful to this day of their example. Just taking that extra step to drop off some extra food blessed my family immensely. Not just our bellies, but our hearts, minds, and characters as well.

Share with someone you know needs it. Someone who needs a visit or a sign of love. If you don't know anyone, ask around. You'll find them.


2. Be creative with your turkey dishes.

Turkey is one of those meats that can go in almost anything. I've prepared a list of possibilities. This is definitely an ongoing list that could be added to, but these are just a few ideas.

  • Add it to your favorite casserole
  • Make a white lasagna (with alfredo sauce instead of marina and turkey instead of beef)
  • Add it to mac' n' cheese or a pasta
  • BBQ Turkey sandwiches
  • Turkey quesadillas
  • Turkey burritos
  • Fried Turkey
  • Turkey, Bacon, Avocado sandwich
  • Turkey Salad sandwich (like a chicken salad sandwich)
  • Sprinkle over a salad
  • Sprinkle over a pizza

  • (etcetera)

Don't you love endless possibilities? I hope you give these a try, but if you have to choose one, I highly recommend the first, to share it. This is a way to spread love this season. And not just to instill it in other people's hearts, but your own as well. Happy Thanksgiving!


Mashed Potato Casserole

Prep time:

Serving size: 6
Calories per serving: 158

Ingredients:
2 (5-ounce) cans vienna sausages
6 cups mashed new potatoes
2 cups shredded Cheddar cheese


Directions:
Cut vienna sausages lengthwise (you can also use leftover cooked turkey instead) and lay them flat on the bottom of a greased 9 X 13 inch pan. Place mashed potatoes (the actual amount can vary depending on preference) over top of the sausages and sprinkle cheese over the whole top. Cover and bake at 350 degrees Fahrenheit until warmed through, about 20-30 minutes.
