The Dip for All Occasions

This dip has shared many memories with my family. It has traveled to baby showers with us, participated in our Christmas dinner, laughed with us at our neighborhood barbeques, joined our family talk on no occasion other than the fact that we were eating dinner, I even made it just over a week ago to serve at a party. Wherever it goes, it is lovingly devoured and it is pleased to do so. It is a dip that can suit any occasion you need it to. It’s simple, it’s versatile, it’s amazing.

I’m technically calling it a dessert, (because it tastes like one to me!) but it really can be served as a side. We have even used it as a base for fruit salad, and that’s heaven! The only problem with this dip is that it is so tasty, I sometimes just want to eat it as straight pudding. I hold back though, and dip my apples and strawberries into it. (But let’s just say I do like a little fruit with my dip if you catch my drift. Each bite is loaded with this creamy goodness).

If you read the party planning article, I mentioned this recipe. It is such a great side to serve because it takes about 15 minutes to assemble, an hour to chill, and can be made easily the night before. You can also literally serve it with probably any fruit. (I’ve even eaten it with melons!) My favorites, though, are strawberries, grapes, and apples. They have that crispy texture, that tart sweetness, and that finger-food-appropriate capability that other fruits don’t always have. However, the sky is the limit. Kiwi’s would be fantastic!

Tip for the apples:You can slice apples the night before without risking them going brown! Right after you slice them, soak them in lemon or sprite soda. This well prevent them oxidizing and will give it an extra punch of flavor. Very tasty, and it compliments the very slight lemon flavor of the dip (don’t worry about the lemon flavor if you hate lemon. It is really very slight)

Recipe

Creamy Caramel Dip

Serves: 20

Yield: 3.5 cups

Ingredients:

1 (8-ounce) package cream cheese softened
3/4 cup brown sugar
1 cup sour cream
2 teaspoons vanilla extract
2 teaspoons lemon juice
1 cup cold milk
1 (3.4-ounce) package instant vanilla pudding
assorted fresh fruit

Directions:

In mixing bowl, beat cream cheese and brown sugar until smooth. Add the remaining ingredients in order, beating well after each addition. Cover and chill for 1 hour. Serve as a dip for fruit or as a base for fruit salad.
