Grilled Blackened Cedar Plank Salmon

Serves: 4

The cedar plank adds a wonderful taste. Plan ahead - soak the plank for at least 1 hour before grilling. You can find cedar planks at kitchen stores, or even hardware stores, but be very careful to get untreated cedar. Treated cedar is toxic.

Ingredients:

Blackening Spice:
2 teaspoons dried basil crushed fine
1 teaspoon dried thyme crushed fine
1 teaspoon dried oregano crushed fine
2 Tbsps garlic power
2 Tbsps ground black pepper
1 Tbsp smoked paprika
1 Tbsp brown sugar
1 Tbsp salt
1 Tbsp onion powder
1-2 Tbsp cayenne pepper depending on taste
mix together and store in small spice jar
For Salmon:
1 lb 1 salmon fillet
blackening spice
cedar plank soaked in water for at least 1 hour

Directions:

1. At least 2 hours prior to cooking, soak cedar plank in water.

2. Mix up the Blackening Spice.

3. Rub the salmon with the spice.

4. Heat grill to med-high. Place the salmon on the cedar plank, skin side down. Grill salmon for 12-15 minutes, or until the salmon is opaque and flaky.
