High Protein Peanut Butter Apricot Energy Bars

Let me tell you something about me. I have a sweet tooth. A big time sweet tooth! And I don't know about you but my cravings are definitely the worst at night. So I really have tried hard to find recipes I love that can give me my sweet fix while also being nutritious and good for my body. One of my very favorite things that meets these requirements are my favorite homemade protein bars. These are so great because I make a batch and then cut them up into individual bars and then can store them in the fridge and freezer to use throughout the coming weeks. Beware, while these are very healthy and great for a meal or snack, they are so tasty you might just be tempted to eat half of them right there on the spot!

Here are a few reasons why I just love these protein bars:

· Because of the protein and oatmeal, you truly feel satisfied and full for several hours.

· These are fantastic for a pre or post workout meal as well because of the great balance of protein, complex carbohydrates, and healthy fats.

· Kids gobble these right up as well and you will feel good knowing you are giving them a nutritious snack.

· These are amazing for an on the go breakfast, or a mid-afternoon snack when you hit that 2:00 slump at work!

· They are a healthy way to curb that sweet craving because they are made from all natural ingredients.

· Most protein bars these days are chuck full of a million ingredients and preservatives I can't pronounce and don't know what they are or what they do. I really love that these have just a few natural ingredients so I know exactly what I am putting in my body.

· And last, but certainly not least, they are SO easy to make! I hope you enjoy them!

High Protein Peanut Butter Apricot Energy Bars

1 cup Natural Peanut Butter (or any nut butter)

1 cup Honey

1 cup Old Fashioned Oatmeal

1 cup Diced Apricots (or dried cranberries)

1 cup Sliced Almonds

3 scoops protein powder

Cinnamon to taste (optional)

Directions:

1) In medium size pot, heat Honey & Peanut Butter on stove on medium heat until texture is runny.

2) Mix in Apricots, Nuts, Oatmeal, & Perfect Fit Protein Powder

3) Stir until all ingredients are well coated

4) Grease a 9×9 pan with fat free non-stick spray.

5) Press in ingredients evenly

6) Cool in fridge for at least 45 minutes

7) Slice & wrap individual bars in foil or plastic wrap.

8) Enjoy!
