Creamy Cajun Chicken Pasta
The Cajun seasoning give the creamy sauce a spicy kick and perks up the taste buds. I especially love the sun-dried tomatoes.
Dovetailing tip: You cooked 2 additional chicken breasts for Meal 1. Remove from the fridge and cut into strips, or cut in 1" cubes. Add 1 tablespoon butter to skillet and heat. Add the chicken and sprinkle with cajun seasoning. Heat gently until warmed, 3-5 minutes. Continue with step 3 below.

Ingredients:
2 | skinless boneless chicken breasts, cut into thin strips |
8 ounces | linguine pasta, cooked al dente |
1 tablespoon | cajun seasoning |
4 tablespoons | butter |
2 | green onions, thinly sliced |
2 cups | heavy whipping cream |
2 tablespoons | sun-dried tomatoes, chopped |
1/2 teaspoon | salt |
1/2 teaspoon | dried basil |
1/4 teaspoon | black pepper, ground |
1/4 teaspoon | garlic powder |
1/2 cup | parmesan cheese, grated |
Directions:
1. Place chicken and Cajun seasoning in a bowl and toss to coat.
2. In a large skillet over medium heat, sauté chicken in butter until chicken is tender, about 5 to 7 minutes.
3. Reduce heat add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through.
4. Pour over hot linguine and toss with Parmesan cheese.
