2 tablespoons olive oil
4 beef top sirloin steak (8 ounces each)
3/4 teaspoon salt
1/2 teaspoon pepper
4 tablespoons butter
Directions:
Preheat oven to 375°. Pat steaks dry with paper towel. Sprinkle with salt and pepper.
Heat oil in a large cast iron skillet to medium-high. In batches, cook steak until the edges form a golden brown crust, 2-3 minutes per side.
Top each steak with 1 tablespoon butter. Transfer skillet to the oven and cook until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 3-4 minutes. Let steak rest for 5 minutes before serving.
